  • 2 Tbsp. oil
  • 1 c. finely chopped onions
  • 1 clove garlic, minced
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed
  • 4 large eggs, slightly beaten
  • 1/2 c. milk
  • 1 c. lightly packed fresh bread crumbs
  • 2 c. (8 oz.) shredded Jack cheese
  • 1 c. grated Parmesan cheese
  • 1/4 lb. Italian salami, finely chopped (about 1 c.)
  • 1/2 c. minced parsley
  • 1/2 tsp. mixed Italian seasoning, crumbled
  • 1/4 tsp. each sage and nutmeg

Directions

    Heat oil in medium skillet over medium heat.

    Add onions, cook and stir until soft and golden, 5 to 6 minutes.

    Stir in garlic; cook 30 seconds.

    Remove from heat.

    Squeeze spinach to remove excess moisture.

    Whisk eggs and milk.

    Stir in spinach, onion mixture and bread crumbs; mix well.

    Stir in cheeses.

    Place mixture in pan; spread evenly.
