Ingredients
- 1 c. chopped celery
- 1 c. chopped bell pepper
- 1 c. chopped onion
- 2 Tbsp. flour
- 3 Tbsp. butter
- 2 tsp. prepared mustard
- 2 c. chicken broth (canned)
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. grated Swiss cheese
- 3 c. cooked rice
- 2 (6 or 7 oz.) cans tuna, drained
Directions

1Steam celery, pepper and onion together for 15 minutes until slightly tender.

2Set aside.

3Melt butter and blend with flour, mustard, broth and seasonings.

4Cook until thickened, stirring constantly.

5Remove from heat and stir in one cup of cheese and remaining ingredients, including the steamed vegetable.

6Turn into a greased, shallow 2-quart casserole.

7Bake at 350° for 30 minutes.

8Top with remaining cup of cheese and bake 5 minutes more.
