Savory Tuna Bake

Ingredients

  • 1 c. chopped celery
  • 1 c. chopped bell pepper
  • 1 c. chopped onion
  • 2 Tbsp. flour
  • 3 Tbsp. butter
  • 2 tsp. prepared mustard
  • 2 c. chicken broth (canned)
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. grated Swiss cheese
  • 3 c. cooked rice
  • 2 (6 or 7 oz.) cans tuna, drained

Directions

    Steam celery, pepper and onion together for 15 minutes until slightly tender.

    Set aside.

    Melt butter and blend with flour, mustard, broth and seasonings.

    Cook until thickened, stirring constantly.

    Remove from heat and stir in one cup of cheese and remaining ingredients, including the steamed vegetable.

    Turn into a greased, shallow 2-quart casserole.

    Bake at 350° for 30 minutes.

    Top with remaining cup of cheese and bake 5 minutes more.
