Scallop And Cod Casserole

- 1 lb. sea scallops and 1 lb. cod (or plan 1/4 lb. each person)*
- 1 lemon
- fat-free margarine
- 3/4 c. skim milk (or enough to cover bottom of casserole)
- salt and pepper
- 1 roll Ritz crackers, crushed
Directions

1Cut scallops in half. Cut cod into bite size pieces (1 to 1 1/2-inch).

2Drizzle fat-free margarine in bottom of casserole dish or in individual serving dishes.

3Arrange cod and scallops in layers.

4Sprinkle fish with lemon. Salt and pepper lightly (optional).

5Cover bottom of dish with milk. Cover fish with a light layer of crushed Ritz crackers.

6Bake at 350° for 30 minutes. Serves 4 to 6.
