- 1 1/2 c. butter or margarine
- 1 1/2 c. all-purpose flour
- 3 qt. milk
- 1/2 c. lemon juice
- 4 tsp. celery salt
- 2 tsp. salt
- 2 tsp. pepper
- 6 1/2 lb. carrots, diced and cooked
- 2 3/4 lb. shredded Cheddar cheese
- 6 1/2 c. crushed, butter-flavored crackers
Directions

1In a saucepan, over medium heat, cook and stir butter and flour until smooth and bubbly, about 2 minutes.

2Gradually add milk and lemon juice.

3Cook and stir until thickened.

4Add celery salt, salt and pepper; mix well.

5Remove from heat.
