  • 1 very small green pepper
  • 1/2 onion, finely chopped
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. paprika
  • 1/4 tsp. dry mustard
  • 1/2 c. milk
  • 2 c. corn
  • 1 egg yolk
  • 1/2 c. dried bread cubes
  • 2/3 c. buttered cracker crumbs

Directions

    Cook pepper, onion and butter until soft.

    Stir often.

    Add flour, mixed with seasonings and stir until well blended.

    Add milk gradually, stirring constantly; bring to boil and add corn, egg yolk and bread cubes.

    Turn into buttered casserole; cover with cracker crumbs and bake at 400° for 1/2 hour or until crumbs are browned.
