  • 1 beaten egg
  • 1 c. milk
  • 1 c. crushed saltine crackers
  • 1 (17 oz.) can cream-style corn
  • 1/4 c. chopped onion
  • 3 Tbsp. chopped pimiento
  • 1 Tbsp. margarine, melted

Directions

    Combine egg, milk, 2/3 cup cracker crumbs, 1/4 teaspoon salt and dash of pepper.

    Stir in onion, corn and pimiento; mix well. Turn into a 1-quart casserole.

    Toss margarine with remaining crumbs; sprinkle atop corn mixture.

    Bake, uncovered, in a 350° oven for 1 hour or until a knife inserted near center comes out clean.
