- 1/2 c. minced onion
- 1 tsp. salt
- 1 1/2 c. cracker crumbs
- 1 tsp. salt
- dash of pepper
- 1 1/4 c. milk
- 6 Tbsp. butter
Directions

1Cut eggplant in cubes.

2Boil with 1 teaspoon salt and onion, covered, for about 5 minutes.

3Drain.

4Make layers of eggplant, 1 teaspoon salt, pepper and crackers.

5Pour in milk; dot with butter.

6Bake at 375° for about 45 minutes.
