Scalloped Potatoes

  • 6 large potatoes, sliced thin
  • 1/4 c. celery, sliced thin
  • 1/4 c. onions, finely chopped
  • 1/4 c. chopped green pepper
  • parsley flakes
  • 2 Tbsp. cornstarch
  • 1/2 lb. cheese
  • about 1 c. milk

Directions

    Place one layer of potatoes (thinly sliced) into a pan. Sprinkle with parsley flakes.

    Add 1/2 of the celery, chopped onion and chopped green bell pepper.

    Add another layer of potatoes and top with the remaining 1/2 celery, onions and green pepper.

    Sprinkle with parsley flakes.

    Add salt and pepper as desired.

    Place strips of cheese on top of other ingredients.

    Mix about 3 tablespoons cornstarch with one cup milk and pour over mixture.

    Bake at 350° until done.
