Scalloped Squash Supreme

  • 6 medium yellow squash
  • 1 large onion
  • 1 egg, lightly beaten
  • 1/2 tsp. black pepper
  • 1/2 c. milk
  • 1 tsp. salt
  • 1 c. bread crumbs
  • 2 c. shredded sharp Cheddar cheese
  • 2 Tbsp. melted butter

Directions

    Preheat oven to 350°.

    Grease a 2-quart casserole.

    Wash squash and slice into 1-inch pieces.

    Cook squash and chopped onion until tender, approximately 10 minutes.

    Drain.

    Combine egg, pepper, milk, butter, salt, fresh crumbs and cup of cheese.

    Arrange squash and onion in casserole and pour egg mixture over them.

    Sprinkle top with remaining cup of cheese.

    Add a dash of paprika for bits of color.

    Bake 30 minutes.
