Scalloped Squash Supreme

- 6 medium yellow squash
- 1 large onion
- 1 egg, lightly beaten
- 1/2 tsp. black pepper
- 1/2 c. milk
- 1 tsp. salt
- 1 c. bread crumbs
- 2 c. shredded sharp Cheddar cheese
- 2 Tbsp. melted butter
Directions

1Preheat oven to 350°.

2Grease a 2-quart casserole.

3Wash squash and slice into 1-inch pieces.

4Cook squash and chopped onion until tender, approximately 10 minutes.

5Drain.

6Combine egg, pepper, milk, butter, salt, fresh crumbs and cup of cheese.

7Arrange squash and onion in casserole and pour egg mixture over them.

8Sprinkle top with remaining cup of cheese.

9Add a dash of paprika for bits of color.

10Bake 30 minutes.

11Makes 6 luscious servings.
