- 2 (17 oz.) cans whole kernel corn
- 1 (16 oz.) lima beans, drained
- 1 (13 oz.) can evaporated milk
- 1 c. (4 oz.) shredded Swiss cheese
- 2 beaten eggs
- 1/4 c. chopped pimento
- dash of pepper
- 2 c. crushed saltine crackers
- 2 Tbsp. melted butter
Directions

1Drain corn, reserving liquid.

2Add water to corn liquid, if necessary, to make 3/4 cup.

3In bowl, combine corn liquid, corn, limas, evaporated milk, cheese, eggs, onion, pimiento, pepper and 1 1/2 cups of cracker crumbs.

4Turn into a 2 1/2-quart casserole. Bake, covered, at 350° for 30 minutes.
