Scalloped Tomatoes

  • 6 c. tomatoes, peeled and cut up (fresh or canned)
  • 1/4 c. margarine
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • salt and pepper to taste
  • 1 Tbsp. sugar
  • 1 1/2 c. toasted bread cubes

Directions

    Cook onion and green pepper in margarine until tender.

    In a 2-quart casserole, mix all ingredients together, except for 1/2 cup bread cubes.

    Sprinkle top with remaining bread cubes and bake in preheated 350° oven for 30 minutes.

    Serves 6.

    For even better taste, top with grated cheese and put under broiler until bubbly brown.
