Scalloped Vegetables

  • 20 oz. frozen mixed vegetables (no potatoes)
  • 1 onion, diced
  • 1/2 stick margarine
  • 8 oz. Velveeta cheese, grated
  • 1/2 pkg. Ritz crackers

Directions

    Add onion to mixed vegetables and cook until barely tender. Drain.

    Add margarine and cheese.

    Stir until blended.

    Put in oblong casserole dish.

    Crumble Ritz crackers and 1/4 stick margarine and top casserole.

    Bake 30 minutes at 325°.
