Scallops In Wine

- 3 Tbsp. butter
- 1 small onion, chopped
- 1 lb. seas scallops or bay scallops
- 1/2 lb. sliced mushrooms
- 1/2 c. dry white wine
- 1/2 c. water
- 1 Tbsp. lemon juice
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1 c. heavy cream or non-dairy cream
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. chopped parsley
Directions

1In skillet over medium heat in hot butter, cook onion until tender (about 5 minutes).

2Add scallops, mushrooms, wine, water and lemon juice.

3Reduce heat to medium-low; cover and cook until scallops are just tender (about 15 minutes), stirring occasionally.

4Meanwhile, in a small bowl, blend flour, salt and cream; gradually stir into scallop mixture.

5Cook, stirring constantly, until thickened.

6Spoon mixture onto heated plates, sprinkle with cheese and parsley.
