  • 2 pounds Ground Beef
  • 1 cup Crushed Crackers Or Oatmeal, Or Combination Of Both
  • 1/4 cups Minced Onion
  • 2 whole Eggs, Slightly Beaten
  • 1/2 cups Milk- Scalded
  • 1/4 teaspoons Ground Nutmeg
  • 1/4 teaspoons Allspice
  • 1/4 teaspoons Ginger
  • Salt And Pepper, to taste
  • 1 can Cream Of Chicken Soup
  • 1/2 cups Milk
  • 3 cups Chicken Or Beef Gravy; Canned Or Leftover

    Preheat oven to 375 degrees.

    Combine ground beef, crushed cracker or oatmeal, minced onion, eggs, 1/2 cup scalded milk, nutmeg, allspice, ginger and salt and pepper.

    Mix with hands or wooden spoon only until combined.

    Roll into meatball shapes about the size of a large walnut.

    Place meatballs on a large baking sheet with sides, and put them in the oven for 20 minutes or until cooked through.

    You may turn the meatballs to brown all sides, but it isnt necessary.

    Meanwhile, in a large roaster or dutch oven, combine cream of chicken soup, 1/2 cup milk and gravy (I often use more gravy than this, we love it over mashed potatoes!).

    When meatballs are done, remove them from the baking sheet and add them to the gravy mixture.

    Reduce oven temperature to 350 degrees.

    Bake meatballs for an hour, or a little longer if you wish.
