- 2 cups cooked rice
- 3 eggs, beaten
- 1/2 cup sugar
- 1/4 teaspoon salt
- 3 1/2 cups milk
- 1/2 cup raisins
- 1/2 teaspoon lemon juice
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon butter
Directions

1Combine rice, eggs, sugar, salt, milk, raisins, and lemon.

2Spray a baking dish with cooking spray and pour in the rice mixture. Tap the dish on the counter to settle it.

3Sprinkle the top with the cinnamon and nutmeg and drop small pieces of the butter evenly across the pudding.

4Bake for 1 hour and 350°F May be served warm or cold.
