- 2 c. firmly packed sausage meat
- 5 hard-boiled eggs, shelled
- 1 large egg, beaten
- dusting of flour
- dry white breadcrumbs
- deep fat for frying
Directions

1Dust each egg with a little flour.

2Divide the sausage meat into 5 pieces.

3On a floured surface, work each piece into an oval.

4Place an egg into the center of each one; mold the sausage meat around it, making sure the surface is free from cracks.

5Put the beaten egg and breadcrumbs onto separate plates; coat each egg first in the liquid egg, then in the breadcrumbs so that the surface is completely covered.

6Coat each egg again if you like to ensure a really good surface.
