- 8 hard-boiled eggs
- flour to dust eggs
- 1/2 c. fine bread crumbs
- 1 lb. ground pork sausage
- 1 egg, slightly beaten
Directions

1Peel hard-boiled eggs.

2Divide sausage into 8 parts and flatten each into a round.

3Lightly coat eggs with flour.

4Shape a portion of sausage around each egg to completely enclose.

5Roll each in beaten egg and then in bread crumbs, pressing crumbs well into the sausage.

6Drop eggs into a muffin tin and bake at 375° for 25 to 30 minutes.

7Serve with mustard or Worcestershire sauce.
