  • 8 eggs, beaten
  • 1 tbsp vegetable oil
  • 1/2 cup tomatoes, chopped
  • 1/4 cup onion, chopped
  • 1/2 tsp garlic, minced
  • 1/2 jalapeno pepper, minced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 6 tortillas, flour, 8 inch

Directions

    Saute the tomatoes, onion, jalapeno, and garlic in the vegetable oil.

    Add eggs and scramble the eggs in the vegetable mixture.

    Once scrambled, put 1/2 cup of the mix into the center of a tortilla.

    Put cheese and sour cream on top, and wrap the mixture in the tortilla.
