- 1 c. cubed ham or Canadian bacon
- 1 doz. eggs, beaten
- cheese sauce
- 1/4 c. melted butter
- 1/8 tsp. paprika
- 1/4 c. chopped green onion
- 3 Tbsp. melted butter
- 1 (4 oz.) can sliced mushrooms, drained
- 2 1/4 c. soft bread crumbs
Directions

1Saute ham and green onion in 3 tablespoons melted butter in a large skillet until onions are tender.

2Add eggs and cook over medium-high heat, stirring to form large, soft curds.

3When eggs are set, stir in mushrooms and cheese sauce.

4Spoon eggs into a greased 13 x 9 x 2-inch baking dish.
