Scrambled Egg Casserole

  • 4 slices bacon
  • 1/2 lb. dried beef
  • 1-2 cans mushrooms, drained or 1 C fresh
  • 1/4 C butter
  • 1/2 C flour
  • 1 qt. milk
  • pepper to taste (no salt)
  • 16 eggs
  • 1/4 tsp salt
  • 1 C evaporated milk
  • 1/4 C butter

Directions

    Saute bacon until almost done. Add dried beef, mushrooms, 1/4 C butter. While still hot, add flour, milk, pepper.

    In large skillet soft scramble eggs in butter.

    Butter a 3 qt. casserole.

    Put a small amount of sauce in the bottom of the casserole. Layer eggs and sauce ending with sauce on top. Sprinkle the rest of the mushrooms on top.

    Bake for 1 hour at 275 degrees.
