Scrambled Eggs With Ham

  • 1 Tbsp. butter or margarine
  • 6 eggs
  • 1/4 c. light cream
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 c. diced, cooked ham
  • 1 tsp. chopped chives

Directions

    Melt butter in top of double boiler over boiling water. Combine eggs with cream, salt and pepper.

    Beat with rotary beater until well blended.

    Pour into top of double boiler.

    Cook eggs over boiling water, stirring occasionally 10 minutes.

    Add diced ham to eggs and cook, stirring several minutes longer or until eggs are of desired doneness.

    Stir in chives.

    Add more salt and pepper, if necessary.
