Scrambled Eggs With Ham

- 1 Tbsp. butter or margarine
- 6 eggs
- 1/4 c. light cream
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/3 c. diced, cooked ham
- 1 tsp. chopped chives
Directions

1Melt butter in top of double boiler over boiling water. Combine eggs with cream, salt and pepper.

2Beat with rotary beater until well blended.

3Pour into top of double boiler.

4Cook eggs over boiling water, stirring occasionally 10 minutes.

5Add diced ham to eggs and cook, stirring several minutes longer or until eggs are of desired doneness.

6Stir in chives.

7Add more salt and pepper, if necessary.

8Makes 4 servings.
