Ingredients
- 1 (16 oz.) can salmon
- 2 eggs, hard-boiled and chopped
- 1/2 c. ripe olives, chopped
- 1/2 c. toasted almonds, sliced
- 2 Tbsp. gelatin (unflavored)
- 1/4 c. water (cold)
- 1 c. mayonnaise
- 1 c. sour cream
- 1 Tbsp. onion, grated
- 3/4 tsp. salt
- 2 Tbsp. lemon juice
- 1/2 c. parsley, chopped
Directions

1Drain and flake salmon.

2Mix salmon, eggs, olives and almonds. Soak gelatin in cold water for 5 minutes.

3Dissolve over hot water.

4Add mayonnaise, sour cream, onion, salt and lemon juice. Mix and combine with salmon mixture.

5Mold and place in refrigerator until congealed.

6Remove from mold.

7Garnish with parsley.

8Serve.
