Seafood Bisque

Ingredients

  • 2 lb. mushrooms, sliced
  • 2 small onions, chopped
  • 1 c. butter
  • 4 c. chicken broth
  • 2 qt. half and half
  • 4 lb. seafood (scallops, shrimp, crab meat, sea legs, or can use 1 lb. of each or whatever combination you like)
  • seasonings: bay leaves, Old Bay and pepper to taste

    Saute mushrooms and onions.

    Add enough flour to make a roux. Slowly add chicken broth then half and half, stirring constantly. Add seafood (I suggest precooking seafood in case milk doesn't get hot enough to cook completely; I precook in the microwave).

    Cook very slowly, do not boil.

    Since the seafood is precooked it is only necessary to simmer to get the bisque good and hot.
