Ingredients

  • 1 med. onion, minced
  • 2 tbsp. butter
  • 2 med. potatoes, diced
  • 1 c. water
  • 2 c. cooked seafood of choice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 c. lowfat milk
  • 1 c. light cream

Directions

    In a saucepan, saute/fry the onion in the butter till tender.

    Add in the potatoes and water, and bring mix to a boil.

    Reduce heat, cover, and simmer 10 min, or possibly till the potatoes are almost tender.

    Add in the remaining ingredients and heat gently.

    Don't boil.

    Serves 4.
