Seafood Stuffed Potatoes

  • 8 to 10 potatoes, baked and scooped out
  • 1/4 stick margarine
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1/4 c. milk
  • 1/2 c. chives
  • 1 lb. shrimp, peeled
  • 2 cans white crabmeat, drained
  • 8 oz. sour cream
  • 1 to 1 1/2 c. Cheddar cheese, shredded
  • salt, pepper, red pepper and garlic salt to taste
  • 1 tsp. parsley

Directions

    Saute onion and bell pepper in margarine.

    Add shrimp, crabmeat, seasonings, sour cream, cheese, milk, chives and parsley.

    Heat thoroughly over low heat.

    Scoop out potato meat; cream with small amount of margarine and milk; add seafood mixture.

    Stuff potato hulls and top with shredded Cheddar cheese. Bake at 350° for 15 minutes.
