Senate Bean Soup(Yield: 8 Servings)

- 2 lb. navy beans
- 1 1/2 lb. smoked ham hocks
- 1 medium onion, diced
- 1 Tbsp. butter
- salt and pepper to taste
- 4 qt. hot water
- salt and pepper to taste
Directions

1Wash beans and run through hot water until they are white again.

2Put in pot with 4 quarts hot water.

3Add ham hocks and boil slowly for about 3 hours, covered.

4Saute onion in butter until light brown; add to bean soup.

5Season to taste with salt and pepper, then serve.

6(Do not add salt until ready to serve, as this toughens the beans.)
