Sesame Chicken Nuggets

  • 1 1/2 lb. boneless, skinless chicken breasts
  • 1 Tbsp. each: salad oil and soy sauce
  • 2 egg whites or thawed no cholesterol substitute equivalent to 1 egg
  • 2 Tbsp. dry sherry or other white wine
  • 1/2 tsp. ground ginger or 5 spice powder
  • 4 Tbsp. each bread crumbs and sesame seed

    Cut chicken into bite-size cubes.

    Stir with salad oil, soy sauce, wine, egg whites and ginger.

    Marinate 1 hour.

    Combine bread crumbs and sesame seed; roll chicken cubes in this mixture or shake in a closed plastic bag.

    Arrange in a single layer on a shallow nonstick baking pan sprayed with cooking spray.
