- 1 1/3 cups water
- 1 cup instant brown rice (such as Uncle Ben's)
- 2 teaspoons dark sesame oil
- 1 cup shredded carrot
- 1 tablespoon bottled minced garlic
- 1/4 cup thinly sliced green onions
- 1 tablespoon low-sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
Directions

1Combine water and rice in a medium saucepan; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes or until water is absorbed.

2Heat sesame oil in a small skillet; add carrot, and saute 2 to 3 minutes or until crisp-tender.

3Remove rice from heat; stir in sauteed carrot, garlic, and remaining ingredients.
