  • 1 1/3 cups water
  • 1 cup instant brown rice (such as Uncle Ben's)
  • 2 teaspoons dark sesame oil
  • 1 cup shredded carrot
  • 1 tablespoon bottled minced garlic
  • 1/4 cup thinly sliced green onions
  • 1 tablespoon low-sodium soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper

Directions

    Combine water and rice in a medium saucepan; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes or until water is absorbed.

    Heat sesame oil in a small skillet; add carrot, and saute 2 to 3 minutes or until crisp-tender.

    Remove rice from heat; stir in sauteed carrot, garlic, and remaining ingredients.
