  • 1 12 lbs string beans, trimmed
  • 4 tablespoons light sesame oil
  • vegetable oil (for frying)
  • 1 12 teaspoons fresh ginger, minced
  • 1 12 teaspoons green onions, minced
  • 2 garlic cloves, minced
  • 2 tablespoons ham, minced
  • 2 teaspoons sugar
  • 2 teaspoons red wine vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon soy sauce
  • 14 cup chicken stock
  • 2 teaspoons cornstarch
  • 2 teaspoons sesame seeds (toasted for garnish)

    Heat the oil until very hot.

    Blanch the beans in the hot oil for 30 seconds.

    Drain on paper towels.

    In a separate pan, saute the ginger, green onion, garlic, and ham for 4 minutes.

    Combine the sugar, vinegar, and soy sauce.

    Mix the chicken stock with the cornstarch.

    Add both liquid mixtures to the pan in which the ham mixture was sauteed and bring to a boil, stirring constantly.

    Add the string beans to the pan, heat, and coat with the sauce.

    Serve garnished with the toasted sesame seeds.
