Shad With Cornbread Stuffing

  • 2 bonless shad fillets. Ask you fish monger to cut flaps on the meaty side so you can enclose stuffing.
  • 1/4 lb of cornbread, broken into large crumble. I use Whole Foods but you could bake your own
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 stick of unsatled butter
  • 1 tablespoon poultry seasoning
