- 3 lb. flank steak
- 2 Tbsp. flour
- 2 Tbsp. butter
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 stalk celery, chopped
- 1 carrot, chopped fine
- 1/2 green pepper, chopped
- juice of 1/2 lemon
- 1/2 c. ketchup
Directions

1Cut or score both sides of steak diagonally and dust with flour.

2Saute in heated butter until well browned on both sides. Season with salt and pepper, then add vegetables; last of all, add lemon juice and ketchup.

3Cover tightly and simmer gently for 1 to 1 1/2 hours.

4The vegetables cook down to a rich sauce to be served with the meat.

5Serves 6.
