Shaker Lemon Pie

- 2 large lemons
- 4 eggs, well beaten
- 2 c. sugar
- 2 crust pie, unbaked
Directions

1Slice lemons as thin as paper, rind and all. Combine with sugar.

2Mix well.

3Let stand 2 hours or longer, preferably blending occasionally.

4Add beaten mixture to lemon mixture.

5Mix well. Turn into pie shell, arranging lemon slices evenly.

6Cover with top crust.

7Cut several slits near center.

8Bake at 450° for 15 minutes.

9Reduce heat to 375° and bake 20 minutes or until knife inserted near edge of pie comes out clean.
