Shaker Lemon Pie

- 2 each lemons
- 4 large eggs
- 2 cups sugar
- 2 x pie shell (9 inch)
Directions

1Slice up lemons, rind and all, into a bowl.

2Mix in sugar.

3Note: if lemons are sweet, less sugar is required.

4Allow mixture to stand for at least two hours Mix in four beaten eggs.

5Place in pie shell.

6Put on top crust and cut vents into crust.

7Bake at 450F (230C) for 15 minutes.

8Then bake an additional 25 minutes at 350F (180C).
