- 1 1/2 c. unbleached white flour
- 1/2 c. cornmeal
- 1 Tbsp. baking powder
- 3/4 tsp. sea salt
- 1 egg
- 1 c. whole milk
- 1/4 c. melted butter
- 1 1/2 c. sharp (extra sharp) Cheddar cheese
- generous pinch ground red pepper
Directions

1Preheat oven to 425°.

2Grease 12 muffin cups.

3Mix flour, red pepper, cornmeal, baking powder and salt.

4Beat egg, milk and butter separately and stir into dry ingredients only until just moistened.

5Lightly stir and fold in 1 cup of the cheese.

6Spoon into muffin cups and top with remaining 1/2 cup of cheese.

7Bake 14 to 16 minutes until golden brown.

8Serve piping hot.
