- 2 lb. potatoes
- 1 1/2 lb. lean ground beef
- 1 red pepper or green
- 1 yellow onion
- 1 clove garlic
- 3 Tbsp. chopped parsley
- milk and butter (for potatoes)
- 2 Tbsp. vinegar
- dash of nutmeg
- grated Cheddar or other cheese
- celery stalk (optional)
- 10 oz. fresh green beans or frozen peas (optional)
Directions

1Peel potatoes and cook until tender.

2Peel and chop onion.

3Cut pepper into strips.

4Slice green beans.

5Dice celery.

6Finely chop garlic.

7Mix all together with parsley.

8In large skillet, brown ground meat and drain.

9Add vegetables and vinegar to meat; cook few minutes.

10Mash potatoes, nutmeg, milk and butter.

11Beat until light and fluffy.

12Put meat and vegetables in lightly greased 8 x 12-inch dish.

13Top with potatoes.

14Sprinkle cheese on top.

15Bake at 350° for 25 minutes or until potatoes are light brown.
