Ingredients

  • 4 c. diced potatoes
  • 3 Tbsp. butter
  • 1 large onion
  • 1 c. kidney beans (16 oz.), drained and rinsed
  • 1/4 c. raw rice
  • 1 green pepper, chopped
  • 1 can tomatoes (16 oz.)
  • 1 lb. ground beef
  • 1 can cream of celery soup, diluted as directed
  • salt and pepper to taste

Directions

    Place potatoes in bottom of 2 1/2-quart baking dish.

    Layer butter, onion, beans, rice, green pepper, tomatoes and ground beef (pre-cook enough to drain fat) over potatoes; season with salt and pepper as desired.

    Cover evenly with soup.

    Bake at 350° for 1 1/2 hours.

    Cover the last 30 minutes.
