- 4 c. diced potatoes
- 3 Tbsp. butter
- 1 large onion
- 1 c. kidney beans (16 oz.), drained and rinsed
- 1/4 c. raw rice
- 1 green pepper, chopped
- 1 can tomatoes (16 oz.)
- 1 lb. ground beef
- 1 can cream of celery soup, diluted as directed
- salt and pepper to taste
Directions

1Place potatoes in bottom of 2 1/2-quart baking dish.

2Layer butter, onion, beans, rice, green pepper, tomatoes and ground beef (pre-cook enough to drain fat) over potatoes; season with salt and pepper as desired.

3Cover evenly with soup.

4Bake at 350° for 1 1/2 hours.

5Cover the last 30 minutes.
