- 4 c. diced raw potatoes
- 3 Tbsp. butter
- 1 large onion, diced
- 1 can red kidney beans, drained and rinsed
- 1/4 c. raw rice
- 1 diced green pepper
- 1 can tomatoes
- 1 lb. ground beef
- salt and pepper
- 1 can cream of celery soup
Directions

1Put potatoes in bottom of 2 1/2 quart baking dish.

2Over potatoes, layer butter, onion, beans, rice, green pepper, tomatoes and ground beef.

3Season with salt and pepper; cover evenly with soup.

4Bake in 350° oven for 1 1/2 hours or until potatoes are done.

5If it starts to get too brown, cover with foil the last 30 minutes.
