Ingredients

  • 3 to 4 lb. chuck roast
  • 2 Tbsp. vegetable oil
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 2 medium onions, slivered
  • 1 Tbsp. vegetable oil
  • 1 (15 oz.) can tomatoes, drained and chopped
  • 2 (4 oz.) cans green chilies, chopped
  • 1 tsp. cumin or more to taste
  • 2 tsp. leaf oregano
  • 2 tsp. salt
  • 1/2 tsp. pepper

Directions

    Brown chuck roast in oil in large saucepan or Dutch oven.

    Add 1 cup water, cumin and garlic powder.

    Simmer until meat is tender enough to pull apart (1 1/2 to 2 hours).

    Let cool until cool enough to handle.

    With hands remove and discard fat, bones and gristle.

    Shred remaining lean meat.
