Shrimp and Tomatoes

  • 1 12 lbs shrimp, peeled and devined
  • 1 tablespoon olive oil
  • 2 teaspoons olive oil
  • 18 teaspoon red pepper flakes
  • 2 tablespoons lemon juice, fresh
  • 3 garlic cloves, thinly sliced'
  • 6 plum tomatoes, sliced in half lengthwise then sliced 1/2 inch thick
  • 2 tablespoons parsley, fresh chopped

Directions

    In large skillet, heat 1 tablespoons olive oil over high heat - swirl to coat the pan.

    Add half of the shrimp to the pan.

    Season with pepper and cook 3-4 minutes.

    Transfer to a plate and cover.

    Repeat with the remaining 2 teaspoons olive oil and rest of shrimp.

    Add those to covered dish.

    Reduce heat to medium.

    Add garlic and red pepper flakes.

    Stir in sliced tomatoes.

    Cook 4-6 minutes.

    Return cooked shrimp with any accumulated juices to the pan with the tomato mixture.

    Add lemon juice and parsley; toss to evenly coat.

    Place in serving bowl.

    Note: This may be served as is or over your choice of cooked pasta, rice, or even spinach.
