Shrimp and Tomatoes

Ingredients
- 1 12 lbs shrimp, peeled and devined
- 1 tablespoon olive oil
- 2 teaspoons olive oil
- 18 teaspoon red pepper flakes
- 2 tablespoons lemon juice, fresh
- 3 garlic cloves, thinly sliced'
- 6 plum tomatoes, sliced in half lengthwise then sliced 1/2 inch thick
- 2 tablespoons parsley, fresh chopped
Directions

1In large skillet, heat 1 tablespoons olive oil over high heat - swirl to coat the pan.

2Add half of the shrimp to the pan.

3Season with pepper and cook 3-4 minutes.

4Transfer to a plate and cover.

5Repeat with the remaining 2 teaspoons olive oil and rest of shrimp.

6Add those to covered dish.

7Reduce heat to medium.

8Add garlic and red pepper flakes.

9Stir in sliced tomatoes.

10Cook 4-6 minutes.

11Return cooked shrimp with any accumulated juices to the pan with the tomato mixture.

12Add lemon juice and parsley; toss to evenly coat.

13Place in serving bowl.

14Note: This may be served as is or over your choice of cooked pasta, rice, or even spinach.

15Any salt added to the shrimp and tomatoes would be optional.
