Ingredients

  • 1 stick butter
  • 2 c. chopped 1015 onions
  • 1 green bell pepper, chopped
  • 1 tsp. cayenne
  • 1 to 2 cloves garlic, minced
  • 1 lb. clean, shelled shrimp
  • salt and pepper
  • 1 loaf French bread
  • 2 c. Cheddar cheese, grated (8 oz.)
  • 2 c. Mozzarella cheese, grated (8 oz.)
  • 1 c. sliced black olives
  • 1 c. sliced green olives

    Melt butter in large saucepan.

    Add 1 cup onion, bell pepper, cayenne and garlic; saute over medium heat 2 to 3 minutes.

    Add shrimp and saute about 4 more minutes until pink.

    Season with salt and pepper; set aside.

    Cut French bread in half lengthwise; scoop out soft center.

    Toast bread that was scooped out and crumble into shrimp mixture.

    Divide shrimp mixture and spoon into shells.

    Layer Cheddar and Mozzarella over shrimp.

    Top with olives and remaining 1 cup onion.

    Bake at 350° for about 25 minutes.
