Shrimp Casserole

Ingredients

  • 2 lb. peeled shrimp
  • 12 or 14 oz. crab meat
  • 1 can cream of mushroom soup
  • 1 can Cheddar cheese soup
  • 1 can sliced mushrooms
  • 1 c. chopped celery
  • 1 c. chopped bell pepper
  • 1 c. chopped onions
  • 1/2 c. dried parsley
  • 1 c. chopped green onion
  • 1 stick margarine
  • 1 Tbsp. Creole seasoning
  • few drops of Tabasco (optional)
  • 1 c. rice, uncooked
  • 1 small jar chopped pimento

Directions

    Cook rice as usual and set aside.

    Saute vegetables in margarine.

    Add shrimp, crab meat and seasonings.

    Mix soups well and add to vegetables and shrimp.

    Place cooked rice in a large casserole dish.

    Pour shrimp/vegetable mixture over the rice. Cover and bake for 35 minutes at 350°.

    This recipe makes 1 large casserole or 2 smaller ones.

    One can be easily be frozen and used at a later time.

    Just thaw and bake as usual.
