Shrimp Casserole

Ingredients

  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 1/2 c. celery, chopped
  • 1 can mushroom soup
  • 1 small can whole tomatoes
  • 1 tsp. Worcestershire sauce
  • 2 c. cooked rice
  • 1 lb. raw shrimp or 2 lb. precooked small shrimp
  • 1/2 c. green onions, chopped
  • 1/2 c. parsley, chopped
  • bread crumbs
  • 1 stick butter or oleo

Directions

    Saute celery, onion and bell pepper in butter.

    Add soup and tomatoes.

    Cook 15 minutes.

    Add shrimp, green onions, parsley and Worcestershire sauce and cook raw shrimp 8 minutes or precooked shrimp 3 minutes.

    Add rice and turn into casserole dish.

    Sprinkle bread crumbs over top.

    Bake at 350° for 30 minutes.
