Shrimp Casserole

Ingredients

  • 1 medium chopped green pepper
  • 3/4 c. melted butter
  • 1 can chicken broth
  • 1 can Ro-Tel tomatoes
  • 2 c. uncooked rice
  • 1 medium onion, chopped
  • 2 lb. boiled, peeled shrimp
  • 1 can cream of chicken soup
  • 2 c. Velveeta cheese

Directions

    Saute pepper and onion in butter until tender.

    Boil shrimp and peel.

    Cook rice until tender.

    Mix all ingredients together and simmer until cheese is melted.

    Pout in 3-quart casserole and bake 15 minutes.

    I use water if I don't have chicken broth. Also, you can use Cheddar cheese instead of Velveeta.
