- 1 medium chopped green pepper
- 3/4 c. melted butter
- 1 can chicken broth
- 1 can Ro-Tel tomatoes
- 2 c. uncooked rice
- 1 medium onion, chopped
- 2 lb. boiled, peeled shrimp
- 1 can cream of chicken soup
- 2 c. Velveeta cheese
Directions

1Saute pepper and onion in butter until tender.

2Boil shrimp and peel.

3Cook rice until tender.

4Mix all ingredients together and simmer until cheese is melted.

5Pout in 3-quart casserole and bake 15 minutes.

6I use water if I don't have chicken broth. Also, you can use Cheddar cheese instead of Velveeta.
