- 5 large onions, peeled and sliced
- 4 large potatoes, peeled and sliced
- 1 stick margarine
- 2 c. boiling water
- 3 c. milk
- 1 lb. Velveeta cheese
- salt and pepper
- 2 lb. green shrimp or 1 1/2 lb. cooked shrimp, shelled
Directions

1Lightly cook the onions in butter.

2Add the potatoes and the water.

3Cook until tender.

4Season with salt and pepper.

5Melt the cheese in the milk in the top of a double boiler.

6Add the cheese mixture to the potato-onion-water mixture.

7Add the cooked shrimp; heat.

8This soup can be re-warmed nicely.
