Shrimp Cornbread Dressing

Ingredients
- 1 (8 oz.) can cream of mushroom soup (optional: stir in before cornbread)
- 2 lb. cleaned shrimp, chopped
- 1 c. chopped onions
- 1 c. chopped celery
- parsley
- 1/2 c. chopped bell pepper
- 1 1/2 sticks margarine
- 1/2 c. green onions
- 2 eggs
- 1 pkg. Pepperidge Farm herb seasoning corn bread stuffing
- 1 small prepared cornbread
Directions

1Saute onions, celery and bell pepper in margarine.

2Add chopped shrimp.

3Cook until shrimp is pink.

4Add salt, pepper, parsley and garlic, if desired.

5Add cornbread stuffing and prepared cornbread.

6Add well beaten eggs in 1 cup water.

7Add enough water to mixture until soft.

8Mix well; bake at 350° until brown, about 45 minutes.
