- 2 c. boiled rice
- 1/3 c. finely chopped onion
- 1 chopped chili pepper
- 1/4 c. chopped celery tips
- salt and paprika to taste
- 1 doz. medium size shrimp
- 2 Tbsp. butter
- 1 Tbsp. flour
- 1/2 c. tomato sauce
Directions

1Line 1 1/2-quart casserole with 1 tablespoon butter.

2Pour in half of boiled rice.

3Place 1 tablespoon butter in pint size saucepan; add flour and brown.

4Add onion and chili pepper and cook 5 minutes, stirring constantly.

5Add shrimp, celery and tomato sauce.

6Salt and paprika to taste.

7Pour sauce in casserole; top with remaining rice.

8Bake in preheated oven at 350° for 25 minutes.

9Serve hot.
