Ingredients
- 3 strips bacon
- 2 medium onions, sliced
- 1 green pepper, cut in rings
- 1/2 c. diced celery
- 1 c. tomatoes
- 1 tsp. salt
- 1 c. cooked green peas
- 2 cans cleaned and deveined shrimp
- 1 tsp. chili powder
- 3 c. hot boiled rice
Directions

1Cook bacon until crisp.

2Remove from skillet and break into 1/4-inch pieces.

3Saute onions in bacon fat until tender.

4Add green pepper, celery, tomatoes and salt.

5Cook until vegetables are tender and sauce thickens, about 15 minutes.

6Add peas, shrimp and chili powder and cook 5 minutes longer.

7Add the cooked bacon. Pack rice into a greased 9-inch tube pan.

8Carefully turn rice out on a serving platter.

9Pour sauce in center and around the ring.

10Makes 6 servings.
