Shrimp Creole

Ingredients

  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 garlic clove, minced (optional)
  • 2 Tbsp. vegetable oil
  • 3 Tbsp. flour or 1 1/2 Tbsp. cornstarch
  • 1 tsp. chili powder
  • 1 tsp. salt (if omitting garlic, use 1 tsp. garlic salt)
  • dash of pepper
  • 2 c. canned tomatoes (one 16 oz.)
  • 2 1/2 c. cooked cleaned shrimp (one 16 oz. bag, frozen and ready to cook)

Directions

    Saute onion, green pepper and garlic in oil until tender Blend flour, chili powder and salt into the vegetable mixture.

    Add tomatoes and cook until thick, stirring constantly.

    Simmer 20 minutes.

    Add shrimp to the vegetable mixture.

    Heat thoroughly. Serve over hot rice.
