Ingredients
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1 garlic clove, minced (optional)
- 2 Tbsp. vegetable oil
- 3 Tbsp. flour or 1 1/2 Tbsp. cornstarch
- 1 tsp. chili powder
- 1 tsp. salt (if omitting garlic, use 1 tsp. garlic salt)
- dash of pepper
- 2 c. canned tomatoes (one 16 oz.)
- 2 1/2 c. cooked cleaned shrimp (one 16 oz. bag, frozen and ready to cook)
Directions

1Saute onion, green pepper and garlic in oil until tender Blend flour, chili powder and salt into the vegetable mixture.

2Add tomatoes and cook until thick, stirring constantly.

3Simmer 20 minutes.

4Add shrimp to the vegetable mixture.

5Heat thoroughly. Serve over hot rice.

6Makes 4 servings.
