Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 1/2 c. chopped green pepper
  • 2 Tbsp. margarine
  • 1 clove garlic, minced
  • 1 (16 oz.) can tomato sauce
  • 1 tsp. salt
  • 2 tsp. dried parsley
  • 1/4 tsp. pepper
  • 1 (8 oz.) can mushrooms
  • 1 (10 oz.) pkg. frozen cooked shrimp, thawed
  • 2 c. cooked brown rice (white will work)

Directions

    In a 2-quart microproof casserole, combine onion, celery, green pepper, margarine and garlic.

    Cover; microwave on High for 3 minutes.

    Stir in tomato sauce, salt, parsley, pepper, mushrooms and shrimp.

    Cover; microwave on Medium for 5 minutes.

    Stir.

    Add cooked rice; microwave on Medium for 5 minutes.

    Let stand, covered, for 10 minutes before serving.
