Ingredients

  • 1/4 c. flour
  • 1/2 c. oil
  • 2 c. finely chopped onions
  • 1 c. finely chopped green peppers
  • 1 (8 oz.) can tomato sauce
  • 1/4 c. finely chopped celery
  • 1 Tbsp. chili powder
  • hot cooked rice
  • 2 lb. shrimp
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. red pepper
  • 1/4 to 1/2 c. water
  • 1 1/2 Tbsp. chopped parsley
  • 1 Tbsp. chopped green onion tops

Directions

    Make a golden brown roux of oil and flour.

    Add onion, green pepper and celery; cook slowly until clear, stirring frequently. Add tomato sauce and cook, covered, over low heat for 20 minutes. Add shrimp, black and red pepper and chili powder.

    If mixture becomes dry, add 1/4 cup water.

    Cook 10 minutes longer until shrimp turns pink.

    When ready to serve, stir in parsley and onion tops.

    Serve on rice.
