Ingredients
- 1/4 c. flour
- 1/2 c. oil
- 2 c. finely chopped onions
- 1 c. finely chopped green peppers
- 1 (8 oz.) can tomato sauce
- 1/4 c. finely chopped celery
- 1 Tbsp. chili powder
- hot cooked rice
- 2 lb. shrimp
- 2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper
- 1/4 to 1/2 c. water
- 1 1/2 Tbsp. chopped parsley
- 1 Tbsp. chopped green onion tops
Directions

1Make a golden brown roux of oil and flour.

2Add onion, green pepper and celery; cook slowly until clear, stirring frequently. Add tomato sauce and cook, covered, over low heat for 20 minutes. Add shrimp, black and red pepper and chili powder.

3If mixture becomes dry, add 1/4 cup water.

4Cook 10 minutes longer until shrimp turns pink.

5When ready to serve, stir in parsley and onion tops.

6Serve on rice.

7Makes 8 servings.
